Babette's Feast is a 1987 religious melodrama from the author of 'Out of Africa'" starring Stephane Audran, Jean-Philippe Lafont, Gudmar Wivesson, Birgitte Federspiel, Bodil Kjer, and Jarl Kulle. This wonderful film offers one of the most delicious cooking scenes of all movies, one of them being the Demidoff Blinis (caviar blinis) :

 

Ingrédients (for 8 persons)

1/2 pack of dried yeast 

1 cup of warm milk (but not boiled) 

1 + 1/2 cup of flour

2 egg yolks, slightly beaten 

1/4 cup of heavy cream

1 pinch of salt

2 egg whites, whisked to the soft peak (floppy) stage

1 soup spoon of unsalted butter

1 cup of cream 

125 grs of caviar or more if you like

 

Directions 

Time for preparation : 20 minutes + 2h40 resting 

Cooking time : 15 minutes 

1- in a big bowl, dissolve the yeast in the warm milk. Add 1 cup of flour and beat until the blend becomes smooth. Cover with a clean tissue and let it rest 2 hours in a warm place.

2- Then, make a well, add the egg yolks, the heavy cream and the remaining 1/2 cup of flour. Add the salt, the beaten egg whites, and mix carefully. Cover again and rest 30 to 40 minutes 

3- Heat the clarified butter in a frying pan and drop in soup spoons of the batter, in order to make approx. 7 cm blinis. Cook until the surface starts to bubble, then flip over and cook the other side. When blinis are ready, keep them warm on a heating plate. 

4- Serve 3 to 4 blinis per person with cream and caviar on top
